Strawberry Wine
Ingredients
2 kilos of ripe strawberries
1.5kilos of sugar
1 tsp of citric acid
½ tsp of wine tannin
Sherry or general purpose yeast
How to make Strawberry Wine
- Remove the stems from the strawberries and wash them thoroughly
- Mash the strawberries with a clean potato masher and mix with 1.5 kilograms of sugar and 2 litres of water
- Add a crushed campden tablet and stir well. Leave for 24 to 36 Hrs.
- Strain the liquor into a demijohn and then add another litre of water to the pulp, mix well and strain again.
- Add the citric acid and wine tannin and make up to 4.5 litres with more water.
- Add the yeast (and yeast nutrient if required) and stir thoroughly.
- Fit an air lock and leave the vessel in a warm place about 20-22deg C until there are no more bubbles passing through the air lock.
- Add another campden tablet and rack off into another demijohn and refit air lock.
- Gradually the wine will clear and after about 6 weeks it should be ready to syphon into clear bottles.
- It is best to leave for about another 3 months before drinking.
- You will have a lovely wine to be proud of! It will have a great colour too.
